LEMON FLAXSEED COOKIES

I've been into cookies lately, the snack type not the treat type, not that there's anything wrong with a treat when you need one.  I love the concept of a healthy, nutrient-dense cookie and it's perfect at the end of a long day at school as I make my way to carline.
Here are the details you need:

Ingredients
2 cups almond flour
1/2 cup ground flaxseed
1/4 cup coconut sugar
zest of 1/2 lemon
1 tsp baking soda
1/4 tsp salt
juice of 1/2 lemon
2 eggs
3 tbsp tahini
1 tbsp lemon flavor

Preheat the oven to 350F and line an oven pan with unbleached parchment paper.  Mix wet and dry ingredients separately.  Combine.  Scoop 1 tbsp of mix and roll into a ball.  Place them on the oven pan and flatten the tops with the back of a spoon.  Bake at 350F for about 15 minutes.  Allow cooling on a tray.  Store for 5 days in the fridge in an airtight container.  Enjoy!

These cookies are actually not bad for you as you can see below. I love they have some protein and are not packed with sugar.

Now I'm thinking I need more Spring flavors.  What shall I make next?

WHY YOU NEED TO MAKE THESE COOKIES
1.  They taste like summer.
2.  They are flavorful and filling.
3.  They are actually not bad for you.
4.  Who doesn't love a cookie as a snack at the end of a long day?
