Chocolate Avocado Cookies (Gluten-Free, Vegan)

These cookies do not contain gluten, dairy or egg.


This week has been such a whirlwind of deadlines and activity.  I didn't get off to a good start either because our weekend was not all that productive.  It was one of those when the stars just won't align and you hold on for dear life.  We are still struggling with my son's sleeping schedule too and this week we've had our share of extended bedtime routines which has its challenges.  
But let's talk about these cookies!  I did manage to bake this past weekend.  I did not plan to make something with avocados though which is kind of funny.  This kind of fell in place after I made the kale salad I posted on Monday.  The results could not have been more pleasing!

Here are the details you need to make these cookies at home:

Ingredients:

2 cups Bob's Red Mill almond flour
1 avocado
1 banana (mashed)
1 tbsp unsweetened cocoa
2 tbsp ground flax seed + 6 tbsp water (2 flax eggs)
1 scoop Live Vegan Smart pea protein powder
1 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt

Preheat the oven to 350 F.  Line a baking sheet with parchment paper.  Combine the flaxseed with the water, mix and let sit for about 10 minutes.  Peel and mash the banana.  Peel the avocado.  Blend the avocado with the banana until everything is well incorporated-  this is key!  Inquisitive minds will ask about that "green thing" in their cookie and then it's all over.  Incorporate the rest of the wet ingredients and mix well.  In a separate bowl, mix the dry ingredients together.  Combine the wet and dry ingredients.  Use 1.5 tbsp mix/cookie.  You can flatten the cookies with the help of a fork.  They will be a little sticky but don't worry about it.  Bake the cookies for 15 minutes at 350 F.  Let them cool on a rack and enjoy!

Not only are they low carb and high in protein, but they also have a good amount of healthy fats and pretty much no sugar.  You are going to love these!  My daughter actually ate them for breakfast which is amazing.  My son decided they were not for him-  we'll keep trying!  You could probably add chocolate chips to these to make them sweeter.  I was trying to
