Cassava Banana Muffins (Gluten-Free)

These muffins do not contain dairy or gluten.

I have been meaning to try cassava flour for a while.  I found it at my local Whole Foods last weekend and couldn't resist!  These cassava banana muffins have been a hit at my house.  They are even toddler-approved.

Are you familiar with cassava flour?  It is made from the root of the cassava plant, a staple crop in South America and parts of Asia.  It is gluten-free and paleo friendly!  The best part is that it actually behaves almost like wheat flour.

My first thought was to make some banana chocolate chip muffins with the cassava flour.  I ended up going with banana almond instead to break free from all the candy we've had around here since Easter.

Here are the details you need to bake these muffins at home:

Ingredients:
  • 1.5 cups Bob's Red Mill cassava flour
  • 3 large bananas
  • 1 egg
  • 1/2  tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup almond butter
  • 1/2 cup unsweetened almond milk
  • 1 tsp almond flavor
***************************************************************
Preheat the oven to 350F and grease the bottom of your muffin tray.  Peel and mash the bananas.  Mix the dry and wet ingredients in separate bowls.  Combine the wet and dry ingredients together.  This mix is enough for 10 muffins.  Bake the muffins at 350F for 20 minutes or until a knife comes out clean.  Allow the muffins to cool on a rack.  Freeze immediately or store in the fridge in an airtight container for a few days.

Here are the nutrition facts for these muffins.  If you are going low carb, these will be great!  They have such a different consistency to what I am used to with other gluten-free flours.  I am very much hooked!

We have been doing a lot of to-go breakfasts for my Little Guy with these this week.  I so enjoy the convenience of muffins.  He'll actually eat these too.  Oh and I've discovered a way to get him to eat bananas again.  He'll eat a full banana but not 1/2 a banana like I was giving him.  He also has to try to peel the banana.  Never a dull moment around here.

Enjoy these super easy and flavorful muffins!  Take a photo and share on Instagram using #peoniesandalatte to show us your creations.

Thank you for reading this post!
