Gluten-Free Apple Garbanzo Breakfast Blondie

Apples are feeling very neglected in our house-  nobody will eat them!  I must confess I'm even gravitating towards citrus fruits instead right now.  We had a fresh batch from the store so I decided to bake with them this week.  My kiddos love the black bean brownies I make them so I baked blondies for breakfast with chickpeas and quinoa flour- something new for them!  I added, of course, a grated apple to the mix!  They look like cake so I think it should be an easy sell for my 2-year-old. 

Here is the recipe I used:
Ingredients
1 can of chickpeas
1/4 cup agave syrup
1 egg+1 egg white
1 tsp vanilla
2 tbsp almond butter
1 small apple (grated)
1 tsp cinnamon
1/4 cup quinoa flour
1/2 tsp baking soda
1/2 tsp baking powder

I baked the mix for 28 min at 350 F.

The blondies have a smooth texture and they are not crumbly!  I will serve them with almond butter for breakfast tomorrow.  They are high in protein from the chickpeas and the quinoa flour, so they will help your kiddos stay full through their morning at school.
