Gluten-Free, Dairy-Free Matcha Protein Cookies

This one is for all the matcha lovers-  gluten-free and dairy-free matcha protein cookies.   It is the perfect snack!  I used almond and quinoa flours and incorporated some pea protein powder for some added nutrition.  For those of you who are not familiar with matcha, it is powdered green tea with a myriad of health benefits.  For instance, it is packed with antioxidants which help boost our immune system, something which is much needed in the midst of flu season.  In addition, matcha's emerald color will give your baked goods a fun green hue!

Here is the recipe I used:
1.5 cups almond flour
0.5 cups quinoa flour
2 tbsp almond butter
1 tsp almond extract
1/4 cup agave syrup
1 scoop Naturade protein powder
1 egg and 1 egg white
3 tsp matcha powder
1/4 tsp salt
1 tsp baking powder

This mix is enough for 9 large cookies.  I baked them at 350F for 13 minutes.

Love their green color!
