Gluten-Free Black Bean Quinoa Brownies


 I have posted a picture of these brownies before on Instagram.  They are delicious and can be prepared in a blender.  It does not get easier.  If you have a can of black beans sitting in your pantry and you don't know what to do with it, you could try this recipe.  Your kiddos will never know they are having black beans and they will be getting a gluten-free snack loaded with good protein, fiber and other nutrients they need.  Hard to believe but we are checking all the boxes and the snack is gluten-free.


Here is the recipe I used:
Ingredients
1 can of black beans
2 tbsp cocoa
1/8 cup coconut sugar
1/4 tsp baking soda
1/4 tsp baking powder
2 eggs
1 tsp vanilla
1 tbsp almond butter
1/4 cup quinoa flour
1/4 cup Enjoy Life gluten- and dairy-free chocolate chips

I blended all the ingredients and then baked the mix at 350F for 28 min.  These will not last long in my house!  They are even great after dinner if you need something sweet but you don't need all the sugar.
