I am all about easy meals in the summer, especially after a morning at the beach or the pool.  You can have a healthy lunch ready in no time after you get home!
I love that most of the prep work for this bowl can be done outdoors ahead of time so you don't have to get your kitchen dirty or warm up the house.  

Here are the details for this yummy bowl!

1 summer squash
1 ear of corn
1 cup quinoa (cooked)
1/4 cup sunflower seeds
olive oil

Grill the corn and the summer squash outdoors.  Cut the squash into pieces and scrape the corn off the cob.  Store in an airtight container.  

Bring two cups of water to a boil.  Rinse one cup of quinoa and add to the boiling water. Turn the heat down and simmer until the quinoa is fluffy.  Set aside and store in an airtight container.

When you are ready to make the bowl, microwave all the ingredients.  I like to use glass containers to store the food.  Add quinoa to the base of the bowl. Top with summer squash, corn, and sunflower seeds.  Season to taste.  Enjoy!

It's such an easy and nutrient-packed dish!  I love all the summer flavors here.  You can't beat a healthy meal that comes together in a breeze without warming up the house on a summer day.
