Happy August! I can't believe how fast the summer is going by. I am not ready for it to end. Today I bring you another easy lunch bowl. You can prepare most of the ingredients ahead of time to make lunch easier.
1 grilled zucchini
1 cup cooked quinoa
1 cup washed pea shoots
1/4 avocado (sliced)
salt
olive oil
Cook 1 cup of quinoa in 2 cups of water until fluffy. Set aside. Slice and grill the zucchini. Allow to cool. Cut the slices in half. Wash the pea shoots. Set aside. Assemble the bowl: add 1/2 cup of cookied quinoa to the base. Top with the zucchini, avocado and pea shoots. Season with salt. Drizzle with olive oil. Enjoy!
This was my first time eating pea shoots. They are the edible plants of the garden pea plant. They are high in antioxidants and anti-inflammatory. I love their bright green color, their crisp texture and their sweet and grassy taste. They definitely pair well with zucchini.
Such a yummy lunch bowl! You can't beat a healthy meal that comes together quickly on a hot summer day.
