LUNCHBOX IDEAS :: Collard Greens and Zucchini

This dish does not contain dairy or gluten.


Happy Monday!  Can you believe it's almost Memorial Day weekend?  It caught me by surprise last night.  Somehow, I thought we still had another week.  We had a busy weekend with lots of time outside and catching up on home projects.  Do you find yourself doing a lot of home projects right now too?



I find that my cooking schedule is all out of sorts these days.  Deliveries are delayed so my usual Sunday cooking frame does not work most weeks anymore.  That means that I find myself cooking at odd times during the week, whenever I have a chance.


I made this zucchini and collard greens stir-fry last week on a whim one day before lunch.  Our veggie box was coming in that day and I had to make room in the fridge!  It is such an easy dish!  

Here are the details you need to make this dish at home:

Ingredients

3 zucchini
2 bunches of collard greens
1.5 cups cherry tomatoes
1/2 cup quinoa (cooked)
1/2 onion 
1 clove of garlic 
1 tsp ginger
salt and olive oil

Cook one cup of quinoa in 2 cups of water until fluffy.  Set aside.  Wash the zucchini and dice into quarters.  Set aside. Wash and dice the tomatoes in half.  Wash the collard greens. Remove and discard the stems and center ribs.  Cut into strips.  Peel and dice the onion and garlic.

Saute the garlic in a pan with a little bit of oil until fragrant.  Add the onion and cook until brown.  Add the zucchini and cook for a few minutes.  Add the collard greens and cook for a few minutes.  Season to taste.  Add the tomatoes and about 1/4 cup of water.  Cover and simmer for a few minutes until all the juices blend in.  Add 1 tsp ginger.  Add the quinoa and fold in gently.  Enjoy!


I loved the contrast of the tomatoes and the collard greens in this dish.  Yummy!  Did you know that collard greens are part of the cruciferous family and have many associated health benefits?  They are high in nutritional value too and are packed with vitamins and minerals.
