LUNCHBOX IDEAS :: Potato Leek Soup


Happy Monday!  On busy weekends when I don't have a lot of time to spend in the kitchen, soup is always a good alternative.  I can get it going while I'm baking.  



We got some really nice leeks in our Misfits box this week so I wanted to try a version of the classic potato leek soup.  I had left over purple potatos and some turnips too that I could use.  That's another good thing of soups, you can use up left over veggies.  


Here's what you need to make this soup at home:


Ingredients
3 leeks
6 small potatos
2 turnips
1 onion
vegetable broth
2 cloves of garlic
salt and olive oil
1 tsp thyme

1.  Wash the leeks thoroughly and dice.  Set aside.
2.  Peel and slice the garlic.  Dice the onion.
3.  Peel and dice the potatos and turnips.  Set aside.
3.  Saute the garlic in a little bit of olive oil until golden.  Add the onion and cook until golden.  Add the potatos and turnips and cook for a few minutes.  
4.  Add the leeks and saute for a few minutes.
5.  Add vegetable broth and cover.  Simmer until the potatos are tender.
6.  Puree with an immersion blender.  Season to taste.
  

Nothing easier than soup for lunch!  This one is so flavorful and healthy for you.  Did you know that leeks are a good source of vitamins A, C and K and contain lots of dietary fiber?  They pair great with potatos too.
