LUNCHBOX IDEAS :: Kale & White Bean Stir-Fry

This dish does not contain dairy, egg or gluten.


Wednesday is all about wellness and wellness right now involves eating healthy meals that are not very involved because we have a lot on our plates as mamas.



I have neglected to cook anything with the kale we have gotten in the past couple of veggie boxes which goes to speak about how busy our days have been.  This week, I was determined to make that trend disappear.

We were on our homeschool break so I decided I would put this together on Tuesday since I had a little extra time.





Here's what you need to make this dish at home:
Ingredients 
2 bunches of kale
1/2 onion
1 cup quinoa (cooked) 
1 can white beans (organic)
salt and ginger 
olive oil
coconut aminos

Wash and cut up the kale.  Set aside.  Peel and chop the onion.  Set aside.  Rinse the white beans.  Set aside.  Cook 1 cup of quinoa in 2 cups of water on low heat until fluffy.  Set aside.  Add some oil to a pan and saute 1/2 onion until golden brown.  Add the kale in batches and cook for a couple of minutes.  Add the white beans and mix gently.  Incorporate the quinoa last.  Season to taste.  Add 1 tsp of ginger and 1 tbsp of coconut aminos.  


This dish will make enough for about 6 servings which is just what you need right now if you're home with your kiddos homeschooling.  You want easy, healthy meals at hand.  Nahia tried this and liked it which says a lot. 


Love that it is packed with plant protein and tons of nutrition.  By the way, I like to use coconut aminos instead of soy sauce in a stir-fry.  It's soy free and has a lot less sodium.
