LUNCHBOX IDEAS :: Eggplant and Quinoa


Happy Monday!  We are back at school after February vacation.  I missed my crew today.  It was so nice to be home with them last week.

We got one eggplant in our Misfits box last week and it wasn't enough to make eggplant parm.  I wanted to make a filling dish that had iron in it and was also high in vitamins and minerals.  Lentils and quinoa came to mind since they are also high in iron.


Here's what you need to make this dish at home:

Ingredients
1 cup of lentils (cooked)

1 cup of quinoa (cooked)
1/2 onion (not pictured)
1 eggplant
vegetable broth
2 cloves of garlic
salt and olive oil

1.  Cook the lentils until tender.  Set aside.
2.  Cook the quinoa until fluffy.  Set aside.
3.  Peel and dice the onion.  Set aside.
4.  Peel and dice the eggplant.  Set aside.
3.  Peel and cut the 2 cloves of garlic.  Add to pan with some olive oil and cook until fragrant.
4.  Add the onion and cook until golden.
5.  Add the eggplant and cook for a couple of minutes.  Add some vegetable broth, cover and cook until tender.
6.  Add the quinoa and mix gently.
7.  Add the lentils and mix gently.  Season to taste.
  

Voila!  Easy and so flavorful.  I love the different textures here too.
