LUNCHBOX IDEAS :: Kale Chickpea Salad

This salad does not contain egg, dairy or gluten.


Happy Monday Guys!  I can't believe we are 10 days shy of Thanksgiving day.  Where does time go?  I am definitely looking forward to the Holiday and the long weekend.  Nahia will be 9 (yikes!) the day before Thanksgiving and we already have our long weekend planned!  



This weekend was more productive than usual so I'm feeling very positive starting my week.  Why is it that simple tasks like putting up frames can take so long?  Am I alone on this?  I've been on this organizing kick and got through half of my dresser.  Folding everything the Marie Kondo way made me feel amazing.  It feels like I have so much more space-  highly recommend!

Now before I get too side-tracked let's talk about this simple dish!  My energy was running low on Sunday so I wanted to put together something quick with the goodies from our Misfits Market box.  We got kale and lots of lemons so I decided on a quick protein salad for the week.  Here are the details!


Ingredients

2 servings
2 bunches of kale
juice of 2 lemons
4 tomatoes
1 cup of quinoa (cooked) 
1 can of chickpeas (organic)
olive oil and salt

Cook 1 cup of quinoa in 2 cups of water.  Simmer on low until fluffy.  Set aside.  Wash and cut the kale.  Wash and dice the tomatoes.  Drain the garbanzo beans and rinse.  Mix the kale with the lemon juice.  Drizzle with olive oil and massage the kale.  Add the chickpeas, tomatoes and quinoa.  Mix well.  Voila!


This salad is so simple and yet so nutritious and flavorful.  Sometimes you just don't have the energy to cook for long but you still want something healthy.
