LUNCHBOX IDEAS :: Roasted Fennel and Carrot Soup

Happy Monday Friends!  It's so nice to have a long weekend, that extra day to help you catch up with life.  Today I bring you a soup recipe.  I have shared before my love for soup in the cold seasons.  This one turned out pretty good!

We got another batch of fennel in our Misfits Market box this week and I did not know what to do with it.  We've usually roasted it and enjoyed it as a side with chicken.  Since we have a bout of cold weather on the way with a very probable first snowfall, a soup seemed like the perfect choice.

I had some carrots left over from last week and I figured they would pair great since they both gain an enhanced sweet flavor when you roast them.  Here are the details you need to make this soup at home!


4 servings
2 bunches of fennel
3 carrots 
2 red onions
2 cloves of garlic
2 zucchinis
olive oil and salt
vegetable broth

Preheat the oven to 425F.  Line a baking sheet with unbleached parchment paper.  Wash the fennel and slice the bulbs.  I remove the green.  Wash, peel and slice the carrots.  Drizzle with olive oil and season.  Bake for about 35 minutes.

In the meantime, peel and slice the garlic cloves.  Repeat with the onion and zucchinis.  Saute the garlic in a little bit of olive oil until it's fragrant.  Add the onion and cook for a few minutes until it starts to turn brown.  I changed my mind with the onion and used two red onions instead.  Add the zucchinis and cook for a couple of minutes.  Add a little bit of vegetable broth and the roasted fennel and carrots (should be almost ready).  Cook for a few minutes until some of the broth evaporates to concentrate the flavor.  Voila!

This one turned out pretty yummy!  It's a little on the chunky side because I was using my immersion blender in my pan and it started splattering everywhere but I am totally fine with the texture.  The flavor here is out of this world!
