LUNCHBOX IDEAS :: Bean Medley

This recipe does not contain egg, dairy or gluten.


Happy Monday!  I hope you had a restful weekend.  My kids both came down with a cold after the first week of school (yikes!).  Nahia still insisted on playing in her soccer game on Saturday and she did okay.  Lucas is doing better too (knock on wood).  His sleep has been all over the place since he went back to daycare and is napping for them in the afternoon.  Hopefully, things settle soon.  I think he does better without the afternoon nap.



This is officially my first recipe with veggies from the Misfits Market box.  I can't tell you enough how much I love this box.  The produce is so fresh.  I was cooking something else tonight with this week's selection and I could not help but notice how fresh and easy to dice everything was.  I'm hooked.  

Let's talk about this yummy recipe though.  It's so easy to put together but you are going to love it!  

Ingredients

4 servings
1 lb green beans
2 cloves of garlic 
Juice of 1/2 lemon
1/4 cup hemp seeds 
olive oil and salt
1 tsp ginger

Peel and dice the garlic.  Cook the garlic in a little bit of olive oil until it's a little brown and fragrant.  Add the green beans and cook for a few minutes.  Rinse the white beans in water.  Add to the green beans and mix well.  Add the hemp seeds and mix well.  Season to taste.  Add 1 tsp of ginger.  Add the lemon juice (lemon grate of 1/2 lemon optional).  Mix well.  



I love how easy this dish comes together.  And yet it is so flavorful and good for you!  The hemp seeds bring some healthy fats, essential fatty acids, minerals and proteins.  Why not bring them along?  I don't know why I didn't start using them sooner.  


The green beans are so fresh they are crunchy and don't feel dry inside.  I think this one warrants a repeat.
