Happy Monday! I have been missing beets for a while. Did you know that they boast an impressive nutritional profile? Not only are they packed with a whole range of vitamins and are high in iron, they also contain pigments that have anti-inflammatory properties. It doesn't hurt that they are the prettiest shade of purple.
I paired beets with grapefruit in this salad which I know might sound a little crazy but it actually works. It's a very nice contrast of flavors. This salad is super easy to prepare and will be in my lunchbox for part of this week. Here is the recipe in case you want to make it at home.
Ingredients
1 bag of spinach
1 grapefruit
1 bag of Trader Joe's baby beets (steamed and peeled)
1/4 cup Trader Joe's hemp seeds
juice of 1/2 lemon
1 tsp grated ginger
olive oil
salt

Wash the spinach and set aside. Slice the beets and mix with the spinach gently. Cut the grapefruit and remove the skin. Slice into small blocks. Mix in with the beets and spinach. Prepare the dressing: juice of 1/2 lemon, drizzle of olive oil, salt and 1 tsp grated ginger. Combine with salad and toss.
This salad is such a nutritional powerhouse of vitamins, minerals and good-for-you plant protein. It is also incredibly flavorful- a must try! I will be eating mine tomorrow with a hard boiled egg for extra protein.
Spinach is my other go-to when making a salad. If you're wondering how it compares to kale, they are both nutritional powerhouses. Kale has more protein and vitamins C and A than spinach but less iron and folic acid. Spinach has more fiber than kale and a lower calorie content. Therefore, they are both good choices so it boils down to personal preference and nutritional needs.
