LUNCHBOX IDEAS :: Kale Pomegranate Lentil Salad

This salad contains no egg, wheat or dairy.


Happy Sunday!  We had a full day of fun at the Children's Museum and somehow I even managed to meal prep and bake today-  miracles do happen.  You are going to love this salad!  It is high in protein and antioxidants and it's also anti-inflammatory.  The best thing is that it contains an interesting mix of textures and flavors so lunch time will not be boring.  If you are on a detox kick right now this salad will help you stay on track.

Kale has a lot of health benefits.  If you haven't tried it yet, it's a good idea to introduce it gradually.  You can start by adding it as a side.  All you need to do is stir fry it with a little bit of garlic for flavor.  Kale is a healthy addition to your diet because it contains fiber, antioxidants, calcium and vitamin k among others.  It's also high in vitamin c and iron, something we can all benefit from.  

Here's what you need to make this salad at home:

Ingredients:
1 12 oz bag organic kale
1 can of organic lentils
1 pomegranate
1/4 red onion
1/2 lemon (juiced)
olive oil
salt, pepper
1 tsp freshly grated ginger

Wash and chop the red onion.  Set aside.  Wash about 1/2 of the kale and set aside.  Rinse the lentils and mix with the kale and red onion.  Now it's time for the pomegranate.  Getting the seeds out can be tricky but this is how I go about doing it.  I roll the fruit to loosen the seeds.  Then I cut the pomegranate in half.  I hold each half over a bowl (with seeds facing down) and tap the skin with a wooden spoon, squeezing a little to remove the seeds.  It's that easy!

Mix together the lentils, pomegranate and kale.  For the dressing, combine the juice of 1/2 lemon with a drizzle of olive oil and 1 tsp of grated ginger.  Season with salt and pepper.  Combine the dressing with the salad and you are done!  


Have you tried pomegranate in salads?  I like to add it whenever possible for its multiple health benefits, specially its antioxidant and anti-inflammatory properties.
