LUNCHBOX IDEAS :: Kale Citrus Salad

This salad is gluten-free and vegan


Happy Monday!  Today I wanted to share with you this new salad recipe that will be in my lunchbox this week.  I love the balance of the citrus notes with the earthy flavor of the kale and the texture of the hemp seeds.  It's a delightful combination that is also super healthy.  It's packed with vitamin c for instance which is oh so essential at this time of the year when everybody seems to be coming down with the flu or that dreaded stomach bug that is going around


Here are the details you need to make this salad at home:

Ingredients:

1/2 bag of kale (washed)
1/4 cup hemp seeds
2 oranges (peeled and cubed)
2 tsp grated ginger
juice of 1/2 lemon
salt and pepper
olive oil

Wash the kale and chop up into smaller pieces.  Set aside.  Peel the oranges and cut into small cubes.  Combine with the kale.  Add 1/4 cup hemp seeds.  Mix together carefully.  Add 2 tsp of grated fresh ginger and the juice of 1/2 lemon.  Drizzle with olive oil and season with salt and pepper.  Combine well.  


Pretty easy to put together, don't you think?  I love the contrast of the orange and the kale.  They work surprisingly well.  I recommend making the salad the day before and letting it sit in the fridge overnight so the flavors build.  


Salad is one of my favorite lunches to pack.  If you make it right with a good amount of protein and fat, I feel fueled all afternoon.  Starchy lunches do not give me the same amount of energy.  Do you feel the same way?  What is your favorite lunch to pack?
