High Protein Apple Muffins (Gluten-Free, Vegan)

These muffins do not contain dairy, gluten or egg.



Happy Saturday Friends!  Are you all ready for Christmas or are you running around trying to get things done?  Don't feel bad!  I managed to mail my Christmas cards this morning.  So very last minute!  They got delayed and did not come in until Friday.  But we got them out, and that's all that matters.

Now lets talk about these muffins!  These apple muffins are one of my most popular recipes on this blog.  I decided to make a vegan, high protein version of them.  They turned out amazing!  I wanted to post these last weekend but managed to misplace the recipe- oops!  I just found it this morning which was such a happy moment.

Here's what you need to make these beauties at home:

Ingredients:

1.5 cups Bob's Red Mill almond flour
1/2 cup Bob's Red Mill millet flour
1 cup grated apples
1 scoop Live Vegan Smart French Vanilla pea protein powder
2 tbsp hemp seeds
1/2 cup unsweetened almond milk
1 tsp almond flavor
4 oz unsweetened applesauce
1 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/4 tsp salt

Preheat the oven to 350F and grease the bottom of your muffin tray.  Peel and grate the apples. Mix the dry and wet ingredients in separate bowls. Combine the wet and dry ingredients and mix well.  Fill the muffin tins about 3/4 of the way up.  This mix is enough for 6 muffins.  Bake the muffins at 350F for 25 minutes or until a knife comes out clean.  Allow the muffins to cool on a rack.  Freeze immediately or store in the fridge for a few days in an airtight container.



Don't they look delicious?  They are very nutrient dense and have a good amount of plant protein in them.



If you are wondering, my kiddos don't really notice or mind the hemp seeds which is amazing.  Hemp seeds are a good source of healthy fats and essential amino acids so I try to use them whenever possible.  They help with cholesterol, inflammation, skin and hair health and balancing hormones.  Have you tried them?
