Banana Donuts (Gluten-Free, Vegan)

These donuts do not contain dairy, egg or gluten.


Happy Wednesday Friends!  It's been quite the week.  Grades are due tomorrow and I've literally been grading non-stop for about a week now (no kidding!).  So glad that we only have 2 days until vacation!  In busy weeks like this one in particula I aim to make breakfast easy but nutritious, specially for the kiddos. Donuts are always a hit at my house.  They are super easy to prepare if you want to give them a try!


Here's the recipe for these beauties!

Ingredients:

1 cup Bob's Red Mill chickpea flour
1/2 cup mashed bananas (make sure they have brown spots)
1 scoop Vegan Smart pea protein powder
2 tbsp coconut oil
1/2 cup unsweetened almond milk
1 tsp cinnamon
1 tsp vanilla
1 tsp apple cider vinegar
1 tsp baking soda
1/4 tsp salt

Preheat the oven to 325 F and spray the bottom of a donut tray with oil.  Mix the wet and dry ingredients in separate bowls.  Combine them.  Add the baking soda and the apple cider vinegar.  This mix is enough for 7 donuts.  I used 4.5 tbsp of mix per donut.  Flatten the tops with the back of a spoon.  Bake the donuts for 18 minutes or until a knife comes out clean.  Let the donuts cool.


Here's the nutritional value for these donuts.  I love using chickpea flour because it has iron and protein which are so good for all.  I don't tell my kiddos they are made with chickpea flour though because I'm bound to get a rejection.  If you like donuts on the sweeter side I would add a couple of tablespoons of coconut sugar to the mix.
