Gluten-Free Chocolate Protein Power Balls

I am taking a break from oven baking in our current heat wave.  Snack balls are a fun option that you can quickly prepare without heating up the house.  I worked on these snack balls with my daughter during nap time.  


I got started on this idea after buying a very yummy gluten-free cereal from Trader Joe's.  It's called "Maple Ladders".  I like that it's low in sugar and has some protein in it since it has chickpea flour as one of its ingredients.  It was a huge hit with my kiddos so it got me thinking about trying cereal bars.  We simply go through so many. 

I figured I could still use the protein in the cereal to make these yummy snack balls.  Here is the recipe I used:

Ingredients:
3/4 cup Maple Ladders cereal from Trader Joe's
1/2 cup Vegan Smart vanilla pea protein powder
1/2 cup smooth peanut butter
2 tbsp cocoa powder (unsweetened)
2 tbsp agave syrup
2 tbsp coconut butter

Grind the cereal using a blender.  Add the rest of the ingredients and mix everything until its well incorporated.  You will need to melt the coconut butter in the microwave for about 35 s before adding.  Use 1.5 tablespoons of mix per ball.  Let the balls sit in the fridge for about 20 minutes before eating. 

That's it!  Pretty easy, don't you think?  These power balls are rich in chocolate flavor.  They pack a lot of protein too so they are a great snack option.  Serving size is one ball.  They each pack about 170 calories and 9 g of protein!  The cereal ladder bits give them some extra texture and a crunch factor.  My daughter loved these.  My toddler son was not very impressed- you can't win them all!
