Gluten-Free Banana Coconut Power Balls

Happy Sunday!  I hope you are enjoying the beautiful weather and break from humidity if you are in New England.  Our love for our newest gluten-free cereal discovery at Trader Joe's continues.  Since the chocolate power balls were a hit, I figured I would come back with another installment of power balls.  Here it is!  


These power balls fill like a treat.  Literally.  But they are actually good for you.  I like the convenience of being able to pack a snack on-the-go for myself that will actually be healthy, gluten-free and satisfying.  These power balls check all the boxes and my daughter seems to be into them too which makes me happy.  Here's the recipe I used:

Ingredients:
1/2 cup Maple Ladders cereal from Trader Joe's
2 scoops Vegan Smart vanilla pea protein powder
1/8 cup coconut flakes
2 bananas
1/4 cup coconut oil
2 tbsp agave syrup

Grind the cereal using a blender.  Set aside.  Puree the bananas with the coconut oil until everything is well incorporated.  Add the rest of the ingredients and mix well.  Use 1.5 tablespoons of mix per ball.  Scoop out the balls (1.5 tbsp/ball) and let them sit in the fridge for about 10 minutes.  I placed them on a plate lined with parchment paper.  After about 10 minutes I was able to roll them into a ball and coat them with coconut flakes.  Make sure you don't let them sit at room temperature for long before enjoying them because they will get sticky.  This recipe makes about 10 power balls and serving size is one ball.

These power balls are delicious!  They satisfy a sweet tooth because they are naturally sweetened by the bananas.
