Gluten-Free Chocolate Donuts

I promised myself I wouldn't bake when the humidity was high but I did so, yet again.  Truth is I missed donuts, and baking too.  So here I am with these gluten-free chocolate donuts.  They are loaded with protein and are low in sugar.  My Little Guy literally ran to the breakfast table this morning when I told him he had a donut waiting for him.


Here is the recipe I used:
Ingredients:

1 cup chickpea flour
2 scoops Vegan Smart pea protein powder
1/4 cup unsweetened cocoa
1 tsp baking soda
1 egg
1 egg white
2 tbsp coconut oil
4 oz unsweetened applesauce
1 tsp apple cider vinegar (add last)
1/8 cup Enjoy Life chocolate chip cookies (gluten-free and dairy-free)

Preheat the oven to 350F and spray the bottom of a donut tray.  Mix the dry ingredients and wet ingredients separately.  Combine them together until everything is well-incorporated.  This mix is enough for 6 donuts.  Sprinkle chocolate chips on top.  Bake the donuts at 350F for 15 minutes or until a knife comes out clean.



Here are the nutrition facts for these donuts.  I think they work great for breakfast or a mid-afternoon snack.  These donuts are naturally sweetened by the applesauce.  This also adds some extra fiber which is always good.  They have a nice amount of protein in them!
