Happy Saturday! It's been a busy one for us just running around doing errands but we plan to have some outside playtime after my toddler wakes up from his nap.
We are still on a healthy chocolate kick around here as you can see. Our favorite gluten-free cookie brand seems MIA at the store lately so I've been experimenting with recipes at home.
These cookies are both soft and decadent. I'm a soft cookie kind of gal and my kiddos seem to prefer them too. They will definitely satisfy a sweet tooth! My kids will have them for a snack with some fruit on the side.
Here is the recipe I used:
Ingredients
2 cups almond flour
1 scoop Naturade pea protein powder
2 tbsp unsweetened cocoa powder
1/4 cup almond milk
1/4 tsp salt
1 tsp baking soda
4 oz unsweetened applesauce
1 egg
1/4 cup Enjoy Freely chocolate chips (dairy- and gluten-free)

I mixed the wet and dry ingredients separately and then combined them together. I used 1.5 tbsp of mix per cookie. This mix is enough for 12 cookies. I baked the cookies at 350F for 15 minutes.

They have a good calorie value/cookie and are low in sugar. They go perfectly with milk too!
