Gluten-Free Strawberry Coconut Donut Holes

It's been a slow week for me.  Allergies get the best of me at this time every season.  You get the picture.  But I'm back on the baking board with a new recipe for you.  My kiddos were asking for donut holes so I made them a batch of strawberry coconut donut holes.  You are going to love these!

The coconut here was an afterthought as I decided to use some of my new coconut flour batch in lieu of the quinoa.  I figured a little extra coconut would give it more flavor and some extra texture.  It worked great! 
Here is the recipe I used:
Ingredients
3/4 cup almond flour
1/4 cup coconut flour
1 scoop Naturade pea protein powder
1/8 cup shredded coconut
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
2 cups of strawberries
4 oz unsweetened applesauce
1 egg

I pureed the strawberries in my Ninja blender.  I had 1/2 cup of pureed fruit.  I mixed the dry and wet ingredients separately and then combined them together without over mixing.  This mix yields 12 donut holes (1.5 tablespoons each).  I baked the donut holes at 350F for 18 minutes.

They are perfect for snacks or for breakfast with some yogurt for instance for extra protein and some nuts for good fat.  You'll find it hard to have just one!  I like to see the high protein content and low sugar.
