Hope you are enjoying your day off! It's so nice to get that extra day after the weekend to catch up, don't you think? The recipe I bring you today is a nap time experiment gone right. Sometimes all the stars align and you end up with a product that everybody loves. I am putting these away before my youngest wakes up from his nap or he'll also want to taste.
I notice that I always tend to incorporate eggs in my recipes so I wanted to put together a mix for a chocolate chip cookie that would be gluten and egg-free but still rich in yummy chocolate. This recipe works well so I wanted to share it with you.
Ingredients
1 cup almond flour
1/8 cup coconut sugar
1 tsp baking soda
1 tsp almond extract
1/2 cup unsweetened applesauce
2 tbsp almond butter
Fold in 1/2 cup Enjoy Life chocolate chips. Let the mix sit for a few minutes.
1 scooped 3 tbsp per cookie (I realize they could and probably should be smaller) and baked them for 18 min at 350 F. If you like them softer, you could shorten this time. One cookie will satisfy your sweet tooth- guaranteed! They are rich in chocolate, low in sugar and simply delicious.
