Gluten-Free Chocolate Walnut Protein Cookies

Cheers to the weekend and February break!  After a brief taste of spring-like weather it seems that we are plunging into winter overnight with some more snow.  No worries though, warmer weather returns tomorrow with temperatures in the 40s.  Winters in the East coast are definitely not for the faint of heart.

I figured vacation week calls for fun breakfast items like these gluten-free chocolate walnut protein cookies.  They are perfect to start your day but would also work great as a midday or mid afternoon snack for you. 

Here is the recipe:
1.5 cups almond flour
1/2 cup coconut flour
2 tbsp cocoa powder
1 scoop Naturade pea protein powder
2 tbsp almond butter
1 banana mashed
3 tbsp unsweetened So Delicious coconut yogurt
2 tbsp cocoa
1/4 tsp salt
1 tsp baking soda
1 egg+1 egg white
1 tsp almond flavor

Add 1/2 cup walnuts to the mix and blend it gently. 

This mix is enough for 7 large cookies.  I baked them at 350 F for 15 min. 

They are soft and have a nutty taste from the almond flour and the walnuts.  Enjoy!
