I figured vacation week calls for fun breakfast items like these gluten-free chocolate walnut protein cookies. They are perfect to start your day but would also work great as a midday or mid afternoon snack for you.
Here is the recipe:
Ingredients
1.5 cups almond flour
1/2 cup coconut flour
2 tbsp cocoa powder
1 scoop Naturade pea protein powder
2 tbsp almond butter
1 banana mashed
3 tbsp unsweetened So Delicious coconut yogurt
2 tbsp cocoa
1/4 tsp salt
1 tsp baking soda
1 egg+1 egg white
1 tsp almond flavor
Add 1/2 cup walnuts to the mix and blend it gently.
This mix is enough for 7 large cookies. I baked them at 350 F for 15 min.
They are soft and have a nutty taste from the almond flour and the walnuts. Enjoy!
