Gluten-Free White Bean Banana Walnut Breakfast Blondie

We have been on a protein pancake kick for breakfast this week.  My toddler son loves to help make pancakes (he calls them 'cakes').  Who doesn't like to start their day with a pancake tower?  We top ours with sunbutter and banana slices. 

We are ending the week on a fun note with banana walnut blondies.  You can make these in a blender-  it does not get easier!


 Here is the recipe I used:

Ingredients
1 can of white beans (rinsed)
1/8 cup of coconut sugar
1 egg+1 egg white
1 tsp vanilla
2 tbsp almond butter
1 large banana
1/4 cup of walnuts
1/4 cup quinoa flour
1/2 tsp baking soda
1/2 tsp baking powder

I added the ingredients to a blender (I have the Ninja) and blended the mix until everything was well incorporated and I couldn't see any white bean skins.  I poured the mix onto a baking dish lined with parchment paper, added the walnuts on top and lightly folded them in.  I baked the mix at 350F for 25 minutes. 


The blondies are mostly naturally sweetened by the banana.  They are high in protein from the white beans and the quinoa flour which also adds B vitamins, vitamin E, magnesium, iron and calcium.  All in all, not a bad way to start your morning don't you think?
