Gluten-free Orange Pistachio Muffins

At this point in the winter season, do you find yourself yearning for spring?  Every year by February I am just ready for warmer temperatures and some green color outside.  I decided I could aim to bring a little color to my baking instead so I used both pistachios and orange zest in this recipe. The orange taste really comes through in these muffins and brings a refreshing taste to them.  I used quinoa and almond flours in this recipe.  They are both gluten-free, paleo-friendly and a good source of protein and fiber.


Here is the recipe:

Ingredients
1 cup almond flour
1/2 cup quinoa flour
2 tsp orange flavor
peel of 1 large orange
1 egg+1 egg white
1 scoop Naturade pea protein powder
1 cup cashew milk
2 tbsp almond butter
1 cup pistachios
1 tsp baking powder
1 tsp apple cider vinegar

This mix is enough for 6 muffins.  I baked the muffins at 375F for 25 min. 


I love the colors in this recipe.  They helped bring light to my kitchen in the evening after a snow storm.  My 7 year old tried these and liked them.  I am not sure if my toddler will go for them with the pistachios inside but at least one kid will!  This was my first time baking with cashew milk.  I do have a dairy allergy also so I adjust for that in my recipes.  So far I have used mostly almond milk.  I find cashew milk has more of a nutty taste than the almond milk.  I do not mind it!  Nutrition-wise, I think the almond milk is a better choice though.
