BAKING WITH MY DAUGHTER: Gluten-free banana bread

Today we baked a yummy loaf of banana bread during nap time and we wanted to share the recipe.  Whenever we have bananas that have turned brown, we know it's time for some homemade banana bread!  Nothing beats the smell of warm banana bread in the cold fall mornings and the kiddos love it for breakfast with some sunbutter.


We were inspired by this recipe (https://www.littlehouseliving.com/easy-gluten-free-banana-bread.html) and made some changes to adapt it to our taste.  In place of the gluten-free flour mix, we used 1 1/4 cups brown rice flour and 1/2 cup of almond flour.  We used applesauce instead of butter and we only added 1/3 cup of coconut sugar.  Everything else was the same.  I find that adding almond flour makes gluten-free breads moist and flavorful.  I don't like to add too much though because then they are too heavy.


This was another fun baking experiment that worked well!  Give it a try!
