What do you do with plums that nobody will eat at home? Make donuts! No, really! It works like a charm, at least with my crew. These donuts are a Fall must-have in my house now.
Ingredients:

1 cup almond flour
1/2 cup (+1.5 tbsp) GF all-purpose flour
2 tbsp coconut oil (melted)
4 plums (pureed)
2 eggs
1 tsp baking soda
1 tsp vinegar
pinch of salt
1 tbsp maple syrup
1 tsp maple flavor
Preheat oven to 350 F. Peel the plums and puree in a blender. Set aside. Mix the dry and wet ingredients separately. Combine. Add the vinegar last. Add 3 tbsp mix to silicon donut pan. Bake in the oven for about 25 minutes or until a toothpick comes out clean. Allow donuts to cool down on a rack. Store in the fridge in an airtight container for about 4 days- enjoy!
Make sure you select plums that have a slight "give" when you squeeze them gently for this recipe. If you need your plums to ripen quickly, just place them in
a paper bag for a few days.
