Happy Monday! If you are off today too, I hope you are having a restful day. Isn't it nice to have a 3-day weekend? No rushing on Sunday night to get everything done!
Here are the details you need to make this lunch bowl at home!
Ingredients
2 bunches of rainbow chard
1/4 cup pine nuts
1 egg
1 cup of quinoa (cooked)
garlic
olive oil and salt
Boil 2 cups of water and add 1 cup of quinoa (washed). Simmer until fluffy and set aside. Wash the swiss chard. Remove the central stem and roughly chop the green leaves. Slice a couple of cloves of garlic and sautee in a pan with a little bit of olive oil until fragrant. Add the rainbow chard leaves and saute for about 5 minutes. You will notice it will turn a deeper shade of green. Add about 1/2 cup of cooked quinoa to the bottom of your bowl. Top with the cooked chard and add about 1/4 cup of pine nuts. Last but not least, add a fried egg for extra protein and you're done!
This bowl is so easy to make and just absolutely delicious. I love the earthy flavor of the rainbow chard. Did you know that dark, leafy green vegetables are amongst the most nutrient-dense foods?
I love the convenience of lunch bowls too. Not only do they come together quickly, but you can also enjoy the same bowl two (or more) days in a row if you prepare extra for each ingredient. If you do so for this bowl, you would only need to prepare the fried egg.
