Oatmeal Cinnamon Muffins


Happy almost Friday!  I am so happy that I am finally eligible for the COVID vaccine in my state.  Now I just need to make it past the virtual waiting room and make my appointment. The fun never ends...
On a different note, these oatmeal cinnamon muffins have been quite a hit.  Not only are they delicious, but my kids have also been devouring them.  It's so hard to find something that they both like...

Here are the details you need to make these muffins at home.


1 cup almond flour

1/2 cup gluten-free all-purpose flour

1 cup gluten-free oats

1.5 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1.5 tsp cinnamon

1/4 cup coconut sugar

1 cup unsweetened almond milk 

3 tbsp coconut oil 

2 eggs 

Preheat oven to 350 F.  Mix the wet and dry ingredients separately.  Combine.  Fill muffin cups 3/4 of the way.  Bake for about 25 minutes or until a toothpick comes out clean.  Allow cooling on a rack.  Enjoy!

I loved the smell of cinnamon in my kitchen as these were baking.  Did I mention that Lucas devoured them?  I think he might actually like oatmeal, at least for now.

I haven't tried freezing these but I think they would do just fine.  It's the perfect on-the-go breakfast.
