Here are the details you need to make these muffins at home.
Ingredients
1 cup almond flour
1/2 cup gluten-free all-purpose flour
1 cup gluten-free oats
1.5 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1.5 tsp cinnamon
1/4 cup coconut sugar
1 cup unsweetened almond milk
3 tbsp coconut oil
2 eggs
Preheat oven to 350 F. Mix the wet and dry ingredients separately. Combine. Fill muffin cups 3/4 of the way. Bake for about 25 minutes or until a toothpick comes out clean. Allow cooling on a rack. Enjoy!

I loved the smell of cinnamon in my kitchen as these were baking. Did I mention that Lucas devoured them? I think he might actually like oatmeal, at least for now.
I haven't tried freezing these but I think they would do just fine. It's the perfect on-the-go breakfast.
