LUNCHBOX IDEAS :: Low Carb Pasta

 


Happy Monday!  We are in the middle of a storm system here today.  They predicted a lot of snow but it doesn't look bad so far.  We shall see.  You never know with the weather in New England.
This low carb pasta definitely hit the spot today.  I love the buttery garlic flavor.  It was the perfect healthy comfort food for a snow day.


Here are the details you need to make this easy dish at home.

Ingredients

spaghetti squash
organic spinach
garlic
olive oil and salt
butter

Preheat the oven to 425 F.  Line an oven pan with parchment paper.  Cut the squash in half and remove the seeds.  Rinse and drizzle with olive oil.  Bake for about 25 minutes.  You should be able to pull out the spaghetti squash easily with a fork. 

Rinse the spinach and chop.  Set aside.  Peel and slice about 4 cloves of garlic.  Sautee with a little bit of olive oil until fragrant.  Add the spinach and cook for a couple of minutes. Add the cooked squash and mix gently.  Add a couple of tablespoons of butter and mix gently.  Voila!


I love the look of spaghetti squash!  


Here's the finished product!  It's simply delicious. Next time, I think I'll add some shrimp to this dish.
