LUNCHBOX IDEAS :: Lemon Hemp Broccoli

Happy Monday! If you got back to work today, I hope you had a good day.  It was definitely tough getting going this morning.
It was so nice to be home over Christmas break.  I got a lot of little projects done around the house which felt so good!

Today I'm sharing a simple recipe with broccoli, lemon, and ginger.  It's delicious and it comes together in no time.  Here are the details you need!

4 heads of broccoli
juice of 1 lemon
zest of 1 lemon
1 tsp ginger 
half a red onion
1 cup of quinoa (cooked)
1/2 cup hemp hearts
salt and olive oil

Cook 1 cup of quinoa until fluffy.  Set aside.  Wash the broccoli.  Peel the onion, wash, and dice.  Saute the onion in a little bit of olive oil until fragrant.  Add the broccoli and cook for a few minutes until tender.  Season and add ginger.  Add lemon zest and ginger.  Mix in quinoa gently and hemp.  Enjoy!
