Applesauce Muffins (Gluten-Free)



Happy Sunday Friends!  If you have applesauce lying around that nobody will eat, you need to give these applesauce muffins a try.  They even have some plant protein!  
Lucas has really been into these lately so I'm riding this wave as long as I can since he's a bit of a picky eater.  He does love to help me make them which is fun.  

Here are the details you need to make these muffins at home.

Ingredients:
1 cup Bob's Red Mill almond flour
1/2 cup Bob's Red Mill gluten-free multi-purpose flour
1/2 scoop Now Sports pea protein powder (might need to adjust based on your brand) 
2 eggs
1 tsp cinnamon
3 tbsp muffins coconut oil 
4oz unsweetened applesauce 
1 tsp baking soda
1/4 tsp salt
1/4 cup unsweetened almond milk 
1/4 cup coconut sugar

Preheat oven to 350F.  Mix dry and wet ingredients separately.  Combine.  Fill muffin tins about 3/4 of the way.  This mix is enough for 6 muffins.  Bake for about 25 minutes or until a knife inserted comes out clean.  Allow cooling on a rack and store in the fridge inside an airtight container.  Enjoy!

I added pea protein powder for an extra boost of nutrition in these.  Feeding toddlers can be a struggle so I try to make things as nutritionally dense as I can.
