Apple Bars (Gluten-Free, Dairy-Free)


Fall is definitely in the air!  The mornings have been crisp and the sun feels warmer.  I'm also noticing the leaves turning!  Our veggie box this week had a bunch of apples so we baked some apple bars.  These are a must-try!



Do you feel like you go through a lot of cereal bars at home too?  And a lot of times, the bars in question don't really fill them up and they are looking for another snack within the half-hour.  You'll find that these bars are filling and also healthy!

Here are the details you need to make these bars at home:

Ingredients

3 eggs
3 apples
1/2 cup coconut sugar
1/2 cup Bob's Red Mill almond flour
1/2 cup Bob's Red Mill all-purpose flour (gluten-free)
1 tsp baking soda
1 tsp ground cinnamon
1 scoop pea protein powder
1/4 cup peanut butter

Preheat the oven to 350 F.  Line a baking dish with unbleached paper.  Wash, peel, and grate the apples.  Combine the rest of the wet ingredients.  Combine the dry ingredients in a separate bowl.  Mix the wet and dry ingredients together.  Add mix to the dish and smoothen the top with the back of a spatula.  I like to sprinkle some coconut sugar on top.  Bake in the oven for about 25 minutes or until a knife comes out clean.  Cut into rectangular portions (about 10) and store them in an airtight container in the fridge.  Enjoy!
