LUNCHBOX IDEAS :: Carrot Leek Soup

This dish does not contain egg, dairy or gluten.


Happy Monday Friends!  We have four more days until February vacation and I'm so ready!  We have been fighting a couple of bugs at home that had Nahia down with a fever over the weekend. I'm wondering when and if Lucas will come down with it too.  Fingers crossed we can all get through the week and enjoy vacation next week!



Do you ever have those moments when you just don't know what to make?  I do.  I can always come up with a soup though.  I love the option of soup for lunch!


Here's what you need to make this delicious soup at home.


Ingredients

4 servings
2 bunches of leeks
5 carrots
1/2 onion
2 celeriac roots 
olive oil and salt
vegetable broth

Peel, wash and dice the carrots and leeks.  Repeat for onion.  Boil in vegetable broth until tender.  Preheat oven to 425 F.  Peel the celeriac root and dice.  Drizzle with olive oil and season with salt.  Roast for 25 minutes.  Add to cooked leeks and carrots.  Puree until you have the desired texture.  Voila!



The leeks and celeriac root area  a wonderful combination of flavor and aroma.  This soup is both filling and flavorful!



Did you know that celeriac is a powerhouse of nutrition?  It has vitamins, minerals and fiber amonng others.
