Zucchini Brownies (Low-Carb, Gluten-Free)

These brownies do not contain wheat or gluten.


It's a good day when your kiddos are asking for veggies- am I not right?  These brownies were a happy accident the other day.  My kids are both sick (sigh) and we were home for the day.  Christmas toys only entertain them for so long so I figured we would do a little baking together.  



We had about 4 small zucchinis still sitting in our drawer and I figured, why not?  Let's make some brownies!


Here are the details you need to make these brownies at home:

Ingredients:

1 cup shredded zucchini (about 4 small ones)
4 tbsp unsweetened cocoa
2 bananas
2 eggs
1 scoop Trader Joe's pea protein powder 
1/4 cup Bob's Red Mill almond flour 
1/4 cup Enjoy Life chocolate chips
2 tbsp chia seeds
6 tbsp peanut butter 
1 tsp baking soda
1/4 tsp salt

Preheat the oven to 350 F and spray the bottom of a tray with oil.  Peel and shred the zucchini.  Add to blender with the rest of the wet ingredients.  Mix the dry ingredients in a separate bowl.  Blend the wet ingredients until smooth.  Add the dry ingredients.  Blend.  Add mix to pan and smooth the top.  Sprinkle chocolate chips.  Bake for about 30 minutes or until a knife comes out clean.  Let them cool on a rack and cut into portions.  Enjoy!



These brownies are yummy and filling.  The chocolate chips on top give them just the right amount of sweetness.  


My kids have literally been devouring these.  I don't think they remember the shredded zucchini that went into the dough.
