LUNCHBOX IDEAS :: Golden Kale

This dish does not contain dairy, egg or wheat.


Happy Monday!  Are you ready for the Holidays?  It's crazy everywhere you go around here but I love this time of the year.  I'm looking forward to our little break ahead.



Our produce box this week had a new variety of kale-  lacinato kale.  I'm a big fan of kale and love cooking with it.  It has so much good nutrition for you!  This week we also got a couple of bunches of golden beets.  They were so fresh and the prettiest shade of orange/yellow.

Did you know that beets aid in detoxification?  Beets contain a group of phytonutrients called betalains that support detoxification through an important 
phase 2 detox step in the liver.  When your liver is able to detoxify chemicals and toxins more effectively, then your body is better able to balance hormones, cholesterol and energy levels.


Here's what you need to make this dish at home: 

Ingredients

2 bunches of golden beets
4 scallions
2 bunches of lacinato kale
1 cup quinoa (cooked)
2 cloves of garlic
1 tsp grated ginger
olive oil and salt

Cook 1 cup of quinoa in 2 cups of water.  Simmer on low until fluffy.  Set aside.  Preheat the oven to 425 F. Wash and cut the beets in 1/2.  Drizzle with olive oil and season with salt.  Roast for 25 minutes.  Set aside to cool.  Wash and chop the kale.  Set aside.  Peel and cut two cloves of garlic.  Saute in a pan until fragrant.  Peel and cut 4 scallions.  Add the scallions and saute until lightly browned.  Add the kale.  Saute.  Add the roasted beets.  Add the grated ginger.  Mix well.  Add the quinoa and mix gently-  voila!


This dish is oh so healthy and so perfect for this time before all the Holiday indulgences.  I love the contrasting flavors of the kale and the golden beets.
