LUNCHBOX IDEAS :: Tuber Medley

Happy Monday Friends! I'm excited about this week with Thanksgiving just a few days away, and, more importantly, Nahia's birthday.  Oh goodness I can't believe she's almost 9! 



So every Saturday we have a growing expectation right around midday which is when our FedEx guy shows up.  The kiddos love when the Misfits Market box shows up!  Lucas insists on bringing the box in every week even though it's bigger than him and then they both take turns putting veggies on the counter.  Then Lucas will ask to have an apple if he sees one in our box.  He actually eats it too.


We have had veggies in our box we have never seen before and that makes things more fun.  Usually a quick google search solves the mystery but this week we were stumped.

See this?  I have never seen it before.  It kind of looks like ginger (slight resemblance) but it's definitely not it.  I checked Misfits Instagram and came upon its id.  It's a Jerusalem artichoke!  It's also called sunchoke,sunroot or earth apple.  It is a species of sunflower native to central North America with a very interesting nutty flavor.


I decided to roast the artichokes with turnips and rosemary and make a stir-fry with quinoa.  Here are the details you need: 

Ingredients

4 servings
1 lb Jerusalem artichokes
4 turnips
fresh rosemary
1 cup of quinoa (cooked) 
2 cloves of garlic
1/4 cup walnuts
2 shallots
olive oil and salt

Cook 1 cup of quinoa in 2 cups of water.  Simmer on low until fluffy.  Set aside.  Preheat the oven to 425 F. Wash and cut the artichokes.  Peel and cut the turnips.  Drizzle with olive oil, season with salt and add some rosemary.  Roast for 25 minutes.  Mix well.  Peel and cut two cloves of garlic.  Saute in a pan until fragrant.  Peel and cut 2 shallots.  Add the onion and saute until lightly browned.  Add the roasted artichokes and turnips.  Mix well.  Turn off the gas.  Add the quinoa and the chopped walnuts.  Mix well.  Voila!


I love all the flavors in this dish and the contrast of the nutty artichokes with the walnuts and the rosemary.  It's a must-try!
