LUNCHBOX IDEAS :: Sweet Green Beans

This dish does not contain egg, dairy or gluten.



Happy Monday!  How is the month ending today?  Not complaining about it, but it does seem like September flew by.  We had another very busy weekend but I got a lot of stuff done which feels good.



I've made this vegan dish two weeks in a row now because it's been a hit and we got some more green beans in our Misfits box this week.  Green beans have a bad rep at my house for some reason so I'll do whatever I can to make them popular!




Here are the details for this yummy dish:

Ingredients

4 servings
1 lb green beans
3 sweet potatoes 
1/4 cup hemp seeds
2 cloves of garlic
salt and ginger

Wash the sweet potatoes and peel them.  Cut into disks and then cut the disks in half.  Wash the green beans and trim off the ends.  Boil the sweet potatoes and the green beans until they are almost tender.

Peel and dice the garlic.  Cook the garlic in a little bit of olive oil until it's a little brown and fragrant.  Add the green beans and sweet potatoes.  Cook for a couple of minutes.  Season with salt and add 1 tsp ginger.  Add 1/4 cup of hemp seeds.  Mix well.  Enjoy!


I love how easily this dish comes together.   It's so well-balanced too and delicious!  Did you know that green beans are a good source of vitamin C, fiber, folate, vitamin K and silicon?  The latter is needed for healthy bones, skin and hair.  Sweet potatoes are rich in fiber too and contain a lot of vitamins like vitamin C and minerals like iron.  They are also high in the anti-oxidant beta carotene.

Needless to say, I had to add some hemp seeds to the mix because why wouldn't I?  My husband has grown to love them too which is a big win in my book.  If you have never tried the, you are missing out!  Not only do they have healthy fats they also have plant protein.
