LUNCHBOX IDEAS :: Crunchy Chickpea Salad

This salad does not contain egg, dairy or gluten.


Happy Monday!  I hope you had a fun, restful weekend.  We had a really fun day at the zoo yesterday with the kiddos.  It was the perfect day to be outside! 



It's been super hot on and off this month but you can definitely see signs of Fall.  It gets dark earlier (sigh) and then we are having cooler days (like yesterday) that almost feel like very early Fall.  In any event, I think that a no frills, quick salad that does not require you to turn on the stove is a top priority right now.  August for me is all about enjoying time outside!

Here's what you need to make this salad at home.

Ingredients
All ingredients are from Trader Joe's 

4 servings
2 cans of chickpeas 
1 cup of grape tomatoes
3 Persian cucumbers
3 celery sticks
3 green onions 

dressing
juice of 1/2 lemon
2 tbsp olive oil
zest of 1/2 lemon
salt

Rinse the chickpeas and set aside.  Dice the grape tomatoes, green onions and celery.  Mix everything together.

Zest and juice a lemon. Add the zest to the salad.  Combine the lemon juice with the oil and drizzle over the salad.  Season with salt to taste.



Make sure you let the salad sit in the fridge at least overnight for the flavors to settle.  I love the citrus vibe here!
