LUNCHBOX IDEAS :: Minty Green Bean Salad

This salad does not contain egg, dairy or gluten.

Happy Monday!  I hope you had a fun, restful weekend.  We are in the midst of a few home projects that always take up so much more time than you expected.  It's been quite warm up here as of late so we have been spending a lot of time at the pool with the kids.  How is your summer going?

This salad is another no frills kind of recipe but it tastes amazing!  It is perfect for any summer cookout too!  Here are the details you need:

All ingredients are from Trader Joe's 

4 servings
1 bag of frozen organic green beans 
1.5 cups diced organic grape tomatos
1 lemon
1 cup Navitas Organics' hemp seeds 

juice of 1/2 lemon
2 tbsp olive oil
2 tbsp chopped mint leaves 

Steam the green beans in boiling water until they are the desired softness.  Set aside. Rinse the grape tomatos and dice.  Combine together.  Add the hemp seeds and mix well.  Prepare the dressing and drizzle over the salad.  Mix well.  Season with salt to taste.  Let the salad sit in the fridge for a few hours to overnight so the flavors settle.  Enjoy!

There you go!  It doesn't get easier than this.  The green beans are lower in carbs so they are a nice option if you are watching your intake levels.  They are also high in antioxidants so they are anti-inflammatory and will help boost your immune system.  

The hemp seeds are a good source of plant protein and healthy fats.  You can't even taste them. I love adding them to salads!
