LUNCHBOX IDEAS :: Orange Almond Salad

This salad does not contain egg, dairy or wheat.  



This salad is a festival for the senses.  It's easy to prepare and has no complex ingredients.  However, it packs color, flavor and texture.  I love the contrast of the juicy orange bites with the crunch of the almond slices, the earthy tones of the spinach against the bite of the ginger in the dressing and the bright orange against the leafy green. 


Truth is I had no idea what I was making this week at first and then it all came together somewhere between the vegetable aisle and the fruit aisle.  I want to keep bringing more fruits into my salad, specially now that the weather is finally warming up. How does that sound?

Here's what you need to make this salad at home:


Ingredients
All ingredients are from Trader Joe's 

2 servings
1 bag of organic spinach
1/4 cup hemp seeds
1/2 cup sliced almonds
1.5 oranges (peeled and cubed)

dressing
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp orange juice 
1 tsp ginger
salt

Rinse the spinach and drain.  Set aside. Peel the oranges and cube.  Juice 1/2 orange.  Mix together the spinach, hemp seeds, oranges and almonds.  Prepare the dressing and drizzle over the salad.  Mix well.  Let the salad sit in the fridge for a few hours to overnight so the flavors settle.  Enjoy!


So simple and yet so yummy!  It's packed with nutrition too, from the protein and folate of the spinach to the good fat of the almond and hemp seeds which also have protein.  You can't go wrong with this one!
