LUNCHBOX IDEAS :: Fiesta Salad

This salad does not contain wheat, dairy or egg.


Happy Sunday Friends!  We got a semblance of summer-like weather on Saturday that also brought all the pollen. It didn't last long.  Today, we are back to the cold, wet weather.  Saturday did put me in a summer frame of mind so I decided to try a kid-friendly version of a pico de gallo salad.  If you are wondering whether my kiddos actually ate it I'll spare you the suspense.  They did not.  Nope, it did not go well.  My daughter at least tried a spoonful.  I consider that a victory.

 Here are the details if you want to try this recipe at home.  I wanted to use black beans but all I had was pinto beans at home.  I went with it and I'm not upset by the results.



Ingredients
All ingredients are from Trader Joe's
4 servings
2 cups diced grape tomatoes
1 cup cooked white quinoa
1 garlic
1 can whole kernel corn
1 can pinto beans
olive oil
2 limes
fresh mint
salt

Prepare 1 cup of quinoa and set aside.  Allow to cool.  Rinse and drain the corn and the beans.  Combine together.  Wash and dice the grape tomatoes.  Mix gently with the corn and beans.  Add the quinoa.  Season to taste with salt.  Dice the garlic small and mix with juice of two limes, a little bit of agave and a drizzle of olive oil.  Add about 2 to 3 tablespoons of finely chopped mint.  Mix well.  Drizzle over salad and mix well.  Allow the salad to sit in the fridge for a few hours so that the flavors settle.  



Voila!  I love the minty taste of this salad.  It is packed with flavor and tastes like summer.  What more could one ask for?  I served it with tortilla chips on the side which was perfect.  It's just like Chipotle, but better!
