Carrot Cake Protein Muffins (Gluten-Free)


These muffins contain no dairy or wheat.


We were due for some nice weather around here and I'm so glad it came for Memorial day weekend.  Today we spent most of our day outside after swim class because it would have been a shame otherwise.  I did manage to fit in some baking while my kiddos took a break from the sun and played inside for a bit.


I am a big fan of carrot cake and have been meaning to make the muffin version for a while.  A while ago, I posted a plantain carrot muffin recipe that was delicious!  These ones taste more like carrot cake, without the raisins and the high calorie cost.  I skipped the raisins because my kiddos would not get close to them otherwise (#momlife).

Here are the details you need to make these muffins at home:

Ingredients:
  • 2 cups Bob's Red Mill almond flour
  • 2 bananas
  • 1 scoop Live Vegan Smart pea protein powder
  • 2 carrots (grated)
  • 1 1/2  tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup almond butter
  • 1/4 cup unsweetened almond milk 
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp almond flavor

Preheat the oven to 350F and grease the bottom of your muffin tray.  Peel and mash the bananas.  Peel, wash and grate the carrots.  Mix the dry and wet ingredients in separate bowls.  Combine the wet and dry ingredients together.  This mix is enough for 7 muffins.  Bake the muffins at 350F for 30 minutes or until a knife comes out clean.  Allow the muffins to cool on a rack.  Freeze immediately or store in the fridge in an airtight container for a few days.



These will work great for breakfast or as an afternoon snack.  I plan to use them for both next week!


Lately, I have gotten into the "muffin parfait" trend.  What's that all about?  You spread some sunbutter (or any other butter) on the muffin, place it in a mug or a bowl and then add toppings.  I stick to sliced bananas for mine but here the sky is the limit.  I tried this with the chocolate protein muffins I had on my Instagram feed last week and they were delicious!  You should try it too!  What would you use as toppings for these?  I'm thinking bananas and coconut chips.
