LUNCHBOX IDEAS :: Lentil Stir-Fry

This stir-fry does not contain dairy, egg or gluten.


Happy Monday!  I am so happy to be on school vacation this week, to have a chance to slow down a bit and just soak in extra time with my kiddos.  This stir-fry is just what you need to start your week on a healthy note.  I just saw this riced vegetable medley at Trader Joe's last weekend and had to try it in a recipe!
Here's what you need to prepare this stir-fry at home:

Ingredients
All ingredients are from Trader Joe's
4 servings
1 bag of Riced Vegetable Medley
1/2 cup cooked white quinoa
garlic powder and ginger
1 can organic lentils 
olive oil
salt

Prepare 1 cup of quinoa and set aside.  Saute the riced vegetable medley for a couple of minutes in a little bit of olive oil and garlic.  Add the riced vegetable medley and saute.  Add the rinsed lentils and mix gently.  Season to taste with salt.  Add garlic powder and ginger.  



Voila!  This lentil stir-fry is not only jam packed with good-for-you plant protein, it's also loaded with vitamins and minerals. If you're wondering how baby kale is different to regular kale, it's milder in flavor and softer in texture so you can actually eat it raw.  I only eat raw kale in juice though. I prefer my kale cooked- it's gentler on your digestive system.
