LUNCHBOX IDEAS :: Arugula Pomegranate Salad

This salad does not contain dairy, egg or gluten.


I had a different plan for this salad and I changed my mind last minute.  I do that sometimes.  The arugula and pomegranate seeds were part of my original scheme though.  I couldn't be happier with the results though and I know that you will love this salad too if you try it.  


Ingredients
All ingredients are from Trader Joe's 

4 servings
1 bag of wild arugula
1 packet of pomegranate seeds
1/2 cup raw pecans 
1/4 cup hemp seeds 
1 lemon
olive oil
salt

Rinse the wild arugula and the pomegranate seeds.  Mix together.  Add the hemp seeds.  Mix.  Add the pecans.  Mix again.  Drizzle olive oil, add the juice of 1/2 lemon and season with salt.  Mix well.


This salad is so simple and yet so flavorful and full of texture.  I love the contrast of the pecans and the pomegranate seeds.  By the way, if you like pomegranates too these pomegranate seed packets from Trader Joe's will make your life super easy.  They are really worth it!  


Can we talk about the nutrition in this salad?  This is another antioxidant powerhouse.  Arugula not only provides essential vitamins and minerals, it is also loaded with phytochemicals which help fight off free radical damage.  Pomegranate seeds are anti-inflammatory and also high in antioxidants like the pecans which in turn provide good fat too.  The hemp seeds add a great source of protein, unsaturated fats, minerals, vitamins and fiber.
