LUNCHBOX IDEAS :: Antioxidant Salad

 This salad does not contain wheat, milk or egg.


This salad was inspired by a bag of brussel sprouts, a new discovery at Trader Joe's this weekend.  They were by the salad aisle so I figured I should incorporate them into one.  I've always enjoyed brussel sprouts warm, sauteed with some bacon and garlic.  It's a delicious combo if you are wondering.



It's amazing how many things you will discover at the store when you shop solo and all your attention can focus in one direction and not multiple.  I even found the coconut aminos sauce I've been meaning to try for a while.  This sauce is made from coconut sap and is kind of like a light soy sauce.  I like that it is free of wheat and soy, another thing I try to avoid.  

Here are the ingredients you need to make this salad at home:

Ingredients
All ingredients are from Trader Joe's 

4 servings
1 bag of organic herb salad mix 
1 bag of baby beets 
1 bag of brussel sprouts 
1 can of white beans 
1/2 cup of pecans 
coconut aminos
olive oil
salt

Rinse the brussel sprouts and beets.  Rinse the salad mix.  Slice the beets.  Rinse and drain the white beans.  Mix all ingredients together carefully.  Add the pecans.  Mix.  Add 2 tablespoons of coconut aminos.  Drizzle olive oil and season with salt.  Mix well.


Voila!  Your salad will come together in a breeze which is a plus when you are running on a tight schedule.  It tastes amazing too!  I'm really loving the coconut aminos here.


This salad is a powerhouse of nutrition.  It is packed with antioxidants from the beets, brussel sprouts and pecans.  Antioxidants are a must in everybody's diet because they help counteract the damaging effect of molecules called free radicals which we all have in our bodies.  They have benefits for the skin and immune system among others, so make sure to include them in your diet!
